Compostos fenólicos a partir de vegetais: uma revisão sobre as classes, propriedades e métodos de extração

Resumo

Os compostos fenólicos sintetizados pelos vegetais destacam-se por apresentar diversas propriedades biológicas com aplicação nas indústrias alimentícias, farmacêutica, cosmética e nutracêutica.  Assim, torna-se importante o estudo desses compostos, assim como de suas classes, estruturas químicas, propriedades e métodos de obtenção. Esta revisão tem como objetivo apresentar as diferentes classes de compostos fenólicos e os métodos usados para extração. Os métodos de extração incluem extração sólido-líquido, extrações assistidas por ultrassom, extrações assistidas por micro-ondas e extração com fluido supercrítico. A partir da pesquisa foi possível demonstrar as principais classes dos compostos fenólicos, condições específicas de obtenção e as principais vantagens e desvantagens dos métodos utilizados tanto na extração quanto para identificação.
